Emulsifies fat. Bile breaks down the fat into tiny fat droplets.

A

When bile emulsifies fat, it breaks down the fat molecules into tiny fat droplets. These tiny fat droplets mean that the surface area of the fat has increased, therefore the lipase enzyme can break down the fat droplets much quicker.
